Big Batch of Brownies

Deeply rich and fudgy brownies with flaky sea salt and enough chocolate to keep everyone awake past bedtime.

Makes one 9 x 13 pan

ExtrasButterSugarSemi-sweet chocolate chips
Ingredients
2 sticks butter
1½ cups sugar
1 cup semi-sweet chocolate chips
3 eggs + 1 egg yolk
2 tsp vanilla
2 tsp espresso powder (optional)
1 cup cocoa powder
1 cup flour
1 tsp salt
¼ tsp baking soda
Flaky sea salt, for finishing
Method
  1. 1Preheat oven to 325 degrees.
  2. 2Slowly melt the butter and chocolate chips together. Add espresso powder if using.
  3. 3Stir in the sugar until dissolved.
  4. 4Transfer mixture to a stand mixer and cool slightly.
  5. 5Add eggs and vanilla and mix until glossy.
  6. 6In a separate bowl, combine cocoa powder, flour, salt, and baking soda.
  7. 7Mix dry ingredients into wet ingredients until just combined.
  8. 8Pour batter into a parchment-lined 9 x 13 baking dish.
  9. 9Bake for about 35 minutes.
  10. 10Sprinkle with flaky sea salt while warm.
  11. 11Cool completely before slicing.
  12. 12Cut into 12 ridiculously huge servings or 24 appropriately sized squares.
Notes
  • These are especially good with vanilla ice cream and cold milk.
Swaps
  • To halve the recipe, simply cut every ingredient measurement in half.
  • Use:
  • 2 whole eggs
  • one 8x8 baking dish
  • Bake for 25–30 minutes.
Use It Again
  • You can pre-make the dry brownie mix ahead of time. Combine the sugar and chocolate chips in one bag and the cocoa, flour, salt, baking soda, and espresso powder in another. All you need later is butter, eggs, and vanilla for speedy quick brownies.
