A simple and quick cookie recipe with crispy edges, chewy centers, and a good reason to drink milk.

Ingredients
  • 1 stick unsalted butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1/4 tsp baking soda
  • 1/4 tsp fine salt
  • 1 cup flour
  • 1 cup chocolate chips
Method
  1. 1Preheat the oven to 350 degrees.
  2. 2Cream together the butter and both sugars.
  3. 3Add the egg and vanilla and combine.
  4. 4If you are making double chocolate, add melted chocolate now.
  5. 5Add the baking soda, salt, and 1/2 cup of the flour.
  6. 6Once combined, add the remaining 1/2 cup flour.
  7. 7Mix in the chocolate chips.
  8. 8Using a large spoon, shape the dough into balls, about 6 per cookie sheet.
  9. 9Bake for 8 minutes, then pull the pan out and smack it against the counter to flatten the cookies and create crispy edges with chewy centers.
  10. 10Return to the oven for 5 more minutes, then smack the pan once more when they are done.
  11. 11Let the cookies cool on the sheet for 2 minutes, then transfer to a rack or eat one right away.
Notes
  • Smacking the tray on the counter, gives you that flat, crispy edge, but leaves a gooey center.
Swaps
  • Add 1/2 cup melted chocolate chips for a batch of double chocolate chip cookies.
Use It Again
  • Freeze a few dough balls to bake fresh cookies later in the week.
  • Pack one in a kid's lunch and be a hero.
