Creamy Herby Dressing
A bright and creamy yogurt dressing packed with fresh herbs that turns a simple salad into something special.
Makes about 1 cup
Sauce / condimentGreek yogurtOlive oilLemon juice
Ingredients
¼ cup greek yogurt
¼ cup olive oil
1 lemon juice (add water to equal ¼ cup)
1 tsp dijon mustard
1 minced garlic clove
½ cup soft herbs: parsley, dill, basil, chives
½ tsp salt
½ tsp pepper
Method
- 1Combine the lemon juice and enough water to equal ¼ cup total liquid.
- 2Add lemon juice to a small food processor or blender with the olive oil, Greek yogurt, Dijon mustard, garlic, herbs, salt, and pepper.
- 3Blend until smooth and creamy.
- 4Taste and adjust seasoning as needed.
- 5Drizzle on greens or store in a jar in the refrigerator until ready to use.
Notes
- If I don't have fresh herbs, I'll substitute a little bit of chopped spinach or arugula and then add about 1 ½ teaspoons of dried herbs like dill and Italian seasoning.
- A small blender or food processor makes the dressing extra smooth, but you can finely mince the garlic and herbs and whisk everything together.
- The flavor gets even better after sitting for 30 minutes in the fridge.
Swaps
- Use sour cream in place of Greek yogurt.
- Try cilantro, green onions, lime juice, and a teaspoon of chili powder for a taco-inspired version.
- Add two-ish tablespoons of grated Parmesan for a richer dressing. Works well with the dried Italian seasoning when you’re out of fresh herbs (or when it’s Winter).
Use It Again
- This dressing is thick enough to double as a vegetable dip.
- Great on simple greens, grain bowls, grilled vegetables, or steak salads.
