Greek Orzo Salad
This can be a full meal in one bowl. It uses a lot of the same flavors and ingredients as my Greek pitas. It's a little lighter and gets better the longer it sits. It's a great make ahead salad and even better as leftovers.

½ red onion

¼ cup red wine vinegar
¾ olive oil
½ tsp dried oregano
½ tsp dried dill
½ tsp salt
½ tsp pepper
chopped cucumber
sliced cherry tomatoes
sliced kalamata olives
crumbled feta
rinsed garbanzo beans
greens of choice
