Guacamole

An extra garlicky, limey, cilantro-packed guacamole that I've been making for over twenty years.

Makes about 2 1/2 cups

Ingredients
4 ripe avocados
1/2 bunch cilantro, chopped
1/2 red onion, diced
2-3 garlic cloves, minced
Juice of 1 lime
1/2 tsp cumin
1/2-1 tsp salt
Method
  1. 1Dice the avocados and add along with the red onion, garlic, lime juice, cumin, and salt to a large mixing bowl.
  2. 2Using a potato masher, mash everything together until combined. Mashing the onion helps release extra flavor into the guacamole.
  3. 3Stir in the cilantro.
  4. 4Taste and adjust the lime, salt, or garlic as needed.
  5. 5Serve immediately or cover with plastic wrap.
Notes
  • Ripe avocados make all the difference.
  • This guacamole is intentionally bold and flavorful. Don't be afraid to tone it down to your taste.
  • Place plastic wrap directly on the guacamole (touching) to prevent browning.
Swaps
  • You can use white onion instead of red.
  • Add a jalapeno for heat.
  • Use garlic powder instead of fresh garlic.
  • Swap out cilantro for parsley if you’re not a cilantro fan.
Use It Again
  • Spoon onto tacos, steak bowls, nachos, or quesadillas.
  • Use leftovers on toast with a fried egg.
