Hearty Sausage Kale and Bean Soup

A hearty, flexible soup with sausage, beans, and greens that comes together easily and eats like a full meal with just a loaf of bread.

Ingredients
  • 1 package diced andouille sausage
  • 1 diced onion
  • 3 cloves minced garlic
  • 3 stalks diced celery
  • 2 diced carrots
  • 2 tsp kosher salt
  • 1/2 tsp black pepper or red pepper flakes
  • 1 tsp Italian seasoning
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can water
  • 1 box chicken stock
  • 1 can white navy beans, rinsed
  • 1/2 bunch chopped kale or spinach
Method
  1. 1Cook the sausage in a large pot over medium heat until browned.
  2. 2Add the onion, celery, and carrots and cook until softened.

  4. 4Pour in the diced tomatoes, tomato sauce, water, and chicken stock.
  5. 5Bring to a simmer and cook for about 15 to 20 minutes.
  6. 6Add the beans and greens and simmer until the greens are wilted and tender.
  7. 7Taste and adjust salt as needed, then serve warm.
Notes
  • This is a full meal in a bowl, especially when served with bread on the side.
  • Cut, wash, and prep the entire bunch of kale to make life easier later.
Swaps
  • Ground turkey for a lighter, pork-free, version.
  • Hot Italian sausage for more spice.
  • Barley for a vegetarian version (add with the broth and cook until tender)
Use It Again
  • Ladle leftovers into lidded soup bowls and store in the freezer for lean times.
