Spicy Sweet Potatoes

A simple tray of roasted sweet potatoes that can start dinner and keep helping later in the week.

Ingredients
  • 2 large sweet potatoes (about 2.5 lbs.)
  • 3 tbsp olive oil
  • 1/4-1/2 tsp cayenne powder
  • 1 tsp kosher salt
Method
  1. 1Preheat the oven to 400 degrees.
  2. 2Peel, wash, pat dry, and dice the sweet potatoes into 1-inch cubes.
  3. 3Spread the sweet potatoes on a sheet pan and drizzle with olive oil, salt, and cayenne.
  4. 4Toss to combine.
  5. 5Roast on the bottom rack for 10 minutes, stir, then roast for another 10 minutes.
Notes
  • Go heavier or lighter on the cayenne depending on how spicy you want them.
Swaps
  • Use cinnamon instead of cayenne for a warm, Thanksgiving feeling.
Use It Again
  • Add them to a bowl later in the week.
  • Reheat them with eggs for breakfast.
  • Toss leftovers into a quick salad.
