Spicy Sweet Potatoes
A simple tray of roasted sweet potatoes that can start dinner and keep helping later in the week.

Ingredients
- 2 large sweet potatoes (about 2.5 lbs.)
- 3 tbsp olive oil
- 1/4-1/2 tsp cayenne powder
- 1 tsp kosher salt
Method
- 1Preheat the oven to 400 degrees.
- 2Peel, wash, pat dry, and dice the sweet potatoes into 1-inch cubes.
- 3Spread the sweet potatoes on a sheet pan and drizzle with olive oil, salt, and cayenne.
- 4Toss to combine.
- 5Roast on the bottom rack for 10 minutes, stir, then roast for another 10 minutes.
Notes
- Go heavier or lighter on the cayenne depending on how spicy you want them.

- Use cinnamon instead of cayenne for a warm, Thanksgiving feeling.
Use It Again
- Add them to a bowl later in the week.
- Reheat them with eggs for breakfast.
- Toss leftovers into a quick salad.
