Buffalo Chicken Cobb Salad
This salad combines all the best parts of buffalo wings and a classic Cobb salad. Spicy grilled chicken, crispy bacon, crunchy carrots and celery, creamy avocado, and funky blue cheese are all tossed together in a light vinaigrette plus a creamy dressing drizzle.

Ingredients
BUFFALO CHICKEN
1½ pounds boneless, skinless chicken breasts or thighs
½ cup Frank's RedHot Buffalo Wings Sauce (or your favorite buffalo sauce)
½-1 cup plain Greek yogurt (optional)
SALAD
8 cups mixed greens
2 carrots, shredded
2 celery stalks, thinly sliced
1 cup cherry tomatoes, halved
1 avocado, diced
4 hard-boiled eggs, halved or chopped
6 slices bacon, cooked and crumbled
½ cup crumbled blue cheese
VINAIGRETTE
1 lemon
1/4 cup olive oil
2 tsp dijon mustard
salt and pepper
DRIZZLE
Creamy herby dressing or store bought blue cheese dressing
Extra buffalo sauce
Method
- 1Marinate the chicken in the buffalo sauce (and greek yogurt for extra juicy chicken) for at least 60 minutes.
- 2Preheat the grill to medium-high heat (about 400-425 degrees).
- 3Grill the chicken for 5-7 minutes per side, depending on thickness, until the internal temperature reaches 165 degrees. Let rest for 5 minutes before slicing.
- 4Toss the mixed greens with the vinaigrette and divide among four bowls.
- 5Top with the carrots, celery, tomatoes, avocado, hard-boiled eggs, bacon, blue cheese, and sliced buffalo chicken.
- 6Serve with creamy herby dressing or blue cheese dressing and an extra drizzle of buffalo sauce.
Notes
- I like to use Frank's hot sauce because it's simple, salty, and turns the marinade into a one-step job. But there are a lot of fun buffalo sauce options out there...use your favorite.
- Adding Greek yogurt to the marinade keeps the chicken extra juicy, especially on the grill.
Swaps
- Sharp white cheddar is delicious if blue cheese isn't your thing.
- Add toasted pumpkin seeds for extra crunch.
- Torn fresh herbs, like basil, parsley, chives, and dill take this salad to the next level.
- Rotisserie or leftover chicken works great and is fast and easy.
Use It Again
- Make extra buffalo chicken for wraps or grain bowls later in the week.
- Leftover bacon is great in BLTAs, breakfast tacos, or burgers.
- Boil extra hard boiled eggs for weekday snacks.
